Cuvée du Pinson
Since 2017, this wine has often been one of Domaine Ponsot’s smallest cuvées in volume. There is a reason for this: it is produced with young vines from our Morey Saint Denis or Gevrey-Chambertin appellations that reclassify into the lower Bourgogne appellation.

Soil Types : 70%: clay-limestone with cone pebbles on a base of fine Comblanchien limestone. 30%: Bresse marl.
Viticulture : Sustainable agriculture, Cordon pruning
Harvest : Hand-picked, sorting in the vineyard
Vinification : Grapes destemmed and fermented in temperature-controlled wooden vats. Native yeasts.
Maturation : 14 to 18 months in French oak barrels. No new barrels. Average age of barrels: 20 years
